Turkish Gözleme

Gözleme is the common and traditional food especially street food in turkey. As I am now biggest fan of turkish food so I decided to cook something. Yesterday I cooked turkish gözleme and it came out super tasty and delicious. So I wanted to share it with you guys and I hope you’ll try it.
In this recipe the most of the common traditional fillings are parsley, meat, spanish, potato and roasted eggplant fillings. I used spinach filling. You can use whichever filling you like or can mix them up as you please.

INGREDIENTS for 2 servings 
Time: 10 min

FOR THE DOUGH
1 cup flour
a little bit less than 1/2 cup  water, room temperature
1/2 tsp salt
PARSLEY FILLING
1/2 cup feta cheese, crumbled
1/4 cup parsley, chopped

SPINACH FILLING
150 g frozen chopped spinach, defrosted
1 small onion, chopped
1 tbsp olive oil
1/4 cup feta cheese, crumbled
1 pinch crushed pepper
Salt to taste
I like spices so i added a little bit of more pepper than above mentioned. Pepper is basically added for taste especially for those who like spices.
For GLAZE
1 tbsp butter, melted

Steps

  1. Mix the flour and the salt in a bowl, then gradually add the water, kneading as you pour and make a dough. Turn the dough onto a lightly floured working surface and knead for 10 minutes. Grease with cooking oil. Cover with a damp cloth and let the dough rest like that for 15 minutes.
  2. Sweat the onions in olive oil, until translucent sauté for 4-5 minutes. Then add spinach, mix well and cook for 1-2 min. Take off heat and stir in the feta cheese. Mix well and set aside.
  3. Divide the dough into four same-sized pieces.
  4. Take a piece out of it and make a ball. Dust dry flour and roll it with the help of rolling pin and roll it as thin as possible. Roll should be of at least 25cm in diameter.
  5. Arrange the filling in the middle then fold the two opposite sides, then the second two opposite sides.
  6. Warm a non-stick pan over medium heat.
  7. Place one gözleme in the pan and cook it until blistered with brown spots, then turn over, and brush with melted butter.
  8. Once cooked on one side, flip it and brush the top with butter.
  9. When cooked on the other side as well, brush that side with melted butter as well.
  10. Cut into pieces, and serve warm.
  11. To make the meat filling, cook all the ingredients, then finish with a sprinkle of chopped parsley.
  12. To make the  roasted eggplant filling, combine all the ingredients.
    For the spinach and potato filling, we have to  first sweat the onions in olive oil, then add all the ingredients except feta and sauté for 4-5 minutes.

Important tip…

The most important thing when making the dough is to roll it as thinly as possible. The filling should be spread in an even, thin layer — do not overdo with the filling as the dough will break. When assembling, there are two ways of going about it. You can fold the dough in half to get a half moon shape or fold it as an envelope. If you do not have a sac, a non-stick pan will work just fine. It is crucial to brush the gözleme with butter or oil before cooking, and even after, as that helps to keep the dough moist
